We knew it be busy, but not this busy ($6500+ in sales). We ran out of fries, caesar dressing, & bearnaise sauce during the middle of the dinner rush. The bearnaise sauce was not a big deal, but the fries & caesar was. Fries & caesar salad are out top selling sides. On the bright side, we all working like well oiled gears together and somehow did not kill each other.

Weekend, evening, tourist town. It’s the off-season, once the ski slopes open it will get crazy busy again. I don’t even question the restaurant industry, I just let it happen.

My wife took a day trip yesterday. On my recommendation, she went to my favorite sushi place. It was not a good experience for her. It appears that the restaurant owner didn’t realize there was an arts festival on his street ! They were understaffed and didn’t have enough food ready for the rush. They waited nearly an hour to get their food.

NOT a well-oiled machine that day.
